Calzones and Peanut Flour

I can’t believe I haven’t posted since last Friday!   Jacob stopped here on his way back to St. Louis, and he told me when he was coming kind of last minute, so I didn’t get a chance to put posts up in advance.

Phantom also had to go to the vet.  He has a parasite called giardia, so I have to give him medicine twice a day for 7 days.  Ugh.

Food

Jacob and I ate out a few times while he was here.  We also saw Black Swan!

However, last night I made us calzones.  I found the recipe on the Weight Watchers website.

I used Pillsbury pizza dough.  I rolled the dough out in a square.  I divided the dough into four pieces.

I put 1/2 cup ricotta and 1/4 mozzarella cheese.  In mine, I also put some Yves Meatless Pepporoni.

They were great.  I had one for lunch today too!  I can’t wait to try these with different filling.  Since I was cooking for Jacob, I kept it simpler.  We sometimes have different tastes in food.

Last night before I went to bed, I prepped some steel cut oats.  I used Beth’s method. It was super easy and made two servings!  I loved how handy it was.

This morning I saved 1 cup for tomorrow morning.  I heated up the other cup with 1/4 cup of Peanut flour from Trader Joe’s.

I loved it!  The texture of the steel cut oats was great.  Mixing in the peanut flour really helped.  It was a ton of protein, but it also added a great flavor.  I’m thinking of fun mix ins for tomorrow.

Lunch was a calzone with a salad.  I ate the salad while the calzone was reheating in the oven.

 

Dinner was breakfast!  I really wanted potatoes, and I just went from there.

My plate had more blueberries, but I ate most of them while cooking.

Workout

I went to the gym after work to run 3 miles.  The gym really wasn’t that crowded especially considering it was right after work and January!

    So glad you tried that easy method for steel cuts. FYI – When I add Peanut Flour, I actually add it at night with the water and oats and they are even creamier in the morning!

      Thanks! I just realized you did that when I found it to link. I need to try that method next time.

      I’ve only tried steel cut oats once before and they didn’t keep me full. I think the peanut flour really helps!

    I’ve slowly experimenting with peanut flour, but haven’t put it in my oats yet. It’d be nice to have some extra protein. How much do you use and do you have to add in extra water ?

    • The first day I added in 1/4 of a cup. This morning I just added in 2 tablespoons. I added a little more water this morning (like just a tablespoon of water) but not much more!

      I like my oats pretty thick though. If you like them a little watery, probably would need more water.

      I wasn’t sure it would mix in well, but it did. I was impressed. I just had to stir it more.
